Caribbean Sweet Potato & Lentil Delight

  • 1 medium red sweet potato (~450 g)
  • 1 large red capsicum (bell pepper)
  • 200 g red lentils (1 cup)
  • 2 onions
  • 2 garlic cloves
  • 270 ml coconut milk
  • 650 ml veggie stock
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 2 tsp curry powder
  • 1.5 tsp turmeric
  • 1 tsp garam masala
  • Fresh coriander
  • Celtic sea salt to taste

Instructions

  • Wash and cut the sweet potatoes into bite-size chunks.
  • Dice the capsicum and onion.
  • Crush the garlic.
  • Heat 1 tbsp olive oil in a pan.
  • Sauté onions and garlic until translucent.
  • Add the sweet potatoes and capsicum and sauté for a few minutes.
  • Add 2 tsp curry powder, 1.5 tsp turmeric, and 1 tsp garam masala and cook for one minute.
  • Add 2 tbsp tomato paste and the coconut milk.
  • Season with sea salt.
  • Simmer for 20 – 25 minutes.
  • Garnish with chopped coriander before serving.
